Ingredients
- 1 onion
- 1 garlic clove chopped
- 3 dates chopped
- 2 cups spinach chopped
- 1 tsp cumin
- 3-4 chicken breasts
- 1 1/2 tbsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Before you get started, preheat the oven to 375° F. Grease a baking pan and set aside.
- Chop the onion into thin slices. Fry in a pan over medium-high heat for roughly 3-4 minutes in olive oil or your preferred cooking oil.
- Add the chopped garlic and dates and fry for another minute.
- Add the spinach. Season with salt, black pepper and cumin. Simmer for 2-3 minutes.
- Rinse and trim the chicken breasts on a cutting board. Take a sharp knife and cut horizontally with the tip of the knife to create an opening at the thickest part of the chicken. This pocket is where you will add the spinach mixture. Season with salt and pepper from all sides.
- Fill the pocket in the chicken with the spinach stuffing.
- Spread the honey on top of the chicken.
- Place in a baking pan and cook for 20-30 minutes in the preheated oven until golden brown or until the internal temperature on the instant-read thermometer is 165° F (74° C). The cooking time depends on the thickness of the chicken breasts.
- Allow time to cool before serving with your desired sides. Enjoy!
Notes
- Large chicken breasts will be the easiest to work with in terms of cutting an opening. You want the pocket to be large enough so you can add the filling. Be careful not to make it too large. If you accidentally cut too far, you can use toothpicks to hold it together.
- If you're worried about the chicken being too dry, add parchment paper or foil to the baking pan. Covering the chicken is a great way to contain moisture.
- Allow your chicken to rest for a few minutes before serving. This will result in a juicy chicken breast, giving it time to absorb all the liquid fully.
- Use a meat thermometer to check the internal temperature of the chicken and ensure the chicken is safe to eat. It should reach 165° F by the time you serve it.
