Chicken Fajita Grilled Burritos

If you love Chipotle burritos, then you're really going to love these grilled burritos, filled with fajita grilled chicken, veggies & cilantro lime rice!

Ingredients
- 2 tbsp olive oil
- 4 tbsp fresh lime juice app 2 limes – divided
- 2 tbsp fresh cilantro chopped – divided
- 2 cloves garlic minced
- ½ tsp cumin
- ½ tsp chili powder
- ½ tsp paprika
- ½ tsp sea salt
- 1 lb boneless, skinless chicken breasts
- 1 red bell pepper
- 1 green bell pepper
- 1 red onion
- 1 cup cooked white rice
- 4 “burrito size” large flour tortillas
- 1 cup pepper jack cheese shredded
- 15 oz can black beans drained & rinsed

Instructions
- In a medium bowl, combine the olive oil, 2 tbsp lime juice, 1 tbsp cilantro, garlic, cumin, chili powder, paprika and sea salt.
- Add the chicken breasts and marinate for an hour (or up to 8 hours) in the refrigerator.
- Slice each bell pepper into four large pieces and slice the onion in large rings.
- Heat a grill to medium.
- Add the chicken to the grill, grill for 10-12 minutes per side.
- About 6 minutes before removing the chicken from the grill, add the bell peppers and onions to the grill and grill for 2-3 minutes per side.
- While everything is grilling, heat the white rice in the microwave for 90 seconds. Mix in the remaining 2 tbsp lime juice and 1 tbsp cilantro, set aside.
- Remove everything from the grill and place on a cutting board, remember to leave the grill turned on to medium heat.
- Dice the chicken, bell peppers and onions.
- In the middle of each tortilla, sprinkle approximately ¼ cup of pepper jack cheese, top the cheese with the cilantro lime rice, black beans and grilled chicken, peppers and onions.
- Fold the ends over, then roll up the burritos tightly.
- Place seam side down on the grill.
- Grill for 2 minutes per side.
- Remove from the grill and serve with sour cream, guacamole, salsa, pico de gallo, hot sauce or a combination of your favorite burrito toppings!
