Chicken Feet Salad

Ingredients

  • 20 chicken feet
  • 1 tbsp. Chinese cooking wine
  • 1/2 tbsp. white rice vinegar

Sauce

  • 3 tbsp. soy sauce light
  • 1/3 cup rice vinegar , or black vinegar
  • 2 lemon , smaller ones (around 200g)
  • 1/4 cup Coriander chopped
  • 1 tbsp. ginger chopped
  • 2 garlic smashed, cloves
  • 1 tbsp. sugar
  • 3 Thai Chili pepper one red and one green| cut into small circles. This can be adjusted by persoanl perference, fresh
  • 1 tsp. salt

Instructions

  1. Cut the claws and then cut each chicken foot into 2 pieces.  Smaller pieces mean better flavors in a shorter time.
  2. In a deep pot with enough cold water, add chicken feet, cooking wine, and rice vinegar. Bring the content to a boil and then cook for 8 minutes (depending on how soft you want the chicken feet to be).
  3. Once cooked, transfer out and clean with warm water (removing extra colloid) . Then pour in cold water to soak the chicken feet for 20 minutes. Soaking with cold water makes the chicken feet' skin more elastic.
  4. Prepare all the seasonings and herbs: add lemon pieces, garlic, ginger, chili peppers, coriander steam, and coriander.
  5. Mix in light soy sauce, vinegar, and sugar. Make a message with the chicken feet for 1 or 2 minutes. Let the sauce combine completely.
  6. Cover with plastic wrapper and set aside in the fridge overnight.
