Description

This Kung Pao Shrimp recipe starts by stir-frying shrimp in vegetable oil until cooked through and removed from the pan to retain their tenderness. The same pan then is used to quickly sauté minced garlic, ginger, dried Sichuan chilies, and thinly sliced green bell pepper, releasing their flavors.

A sauce prepared from cooking wine, soy sauce, and a cornstarch-water slurry is added to the pan to thicken and glaze the vegetables and aromatics. Roasted dry peanuts and green onion segments are stirred in before the shrimp returns to the pan, combining all components.

Resulting in a dish with a balance of heat from chili peppers, nutty crunch from peanuts, and juicy shrimp, it offers multiple textures. The cooking technique ensures the shrimp remain tender while flavors meld through the sauce, making it suitable as a flavorful main served over rice.

  • 2 tablespoons vegetable oil
  • 1 pound Shrimp , (16-20 count) peeled and deveined
  • 1 teaspoon sesame oil
  • 2 cloves garlic minced
  • 2 teaspoons ginger , minced
  • 10 Sichuan chili Chinese variety
  • 1/2 green bell pepper , thinly sliced
  • 1 teaspoon cooking wine , or white wine
  • 2 1/2 tablespoons soy sauce
  • 1 tablespoon cornstarch , mixed with 4 tablespoons water
  • 1/2 cup green onions , cut into 1" segments
  • 1/4 cup peanuts dry roasted

Instructions

  1. Add the vegetable oil to a heavy skillet on medium-high heat.
  2. Add the shrimp and cook 1-2 minutes on each side, or until cooked through.
  3. Remove the shrimp from the pan.
  4. Add in the sesame oil, garlic, ginger, red chili peppers and green bell peppers and cook for 30 seconds, stirring frequently.
  5. Add in the cooking wine, soy sauce and cornstarch slurry.
  6. Cook for 1 minute, stirring frequently until slightly thickened.
  7. Add in the peanuts and green onions and stir.
  8. Add in the shrimp and stir together before serving.
