  • 1 chicken breast shredded, cooked
  • 4 tablespoon mayonnaise
  • 1 rib celery finely diced
  • 1 shallot finely diced
  • 1 tomato sliced
  • 1 little gem lettuce
  • 4 lice bread
  • 1 pinch sea salt
  • 1 pinch black pepper

Instructions

  1. In a bowl, add 1 Cooked chicken breast (chopped), 4 tablespoon Mayonnaise, 1 Shallots, 1 rib Celery and 1 pinch Sea salt and ground black pepper.
  2. Mix well.
  3. Butter 4 slice Bread (optional) and divide the chicken mixture over two slices.
  4. Add 1 Tomato (sliced), 1 Little gem lettuce (chopped) and the other slices of bread.

Notes

  • The chicken mayo mixture can be used on salads instead of sandwiches for variety.
  • To make a vegetarian or vegan version, substitute chicken with a plant-based alternative or mashed chickpeas, and use vegan mayonnaise.
