Ingredients
Ingredients (for 4 persons)
For the marinade
- 1½ lb chicken thighs (deboned), cubed
- 3 tablespoons lemon juice
- 6 cloves garlic
- 1 (2 inches / 5 cm) piece fresh ginger
- 2 teaspoons cumin seeds
- ½ teaspoon ground coriander
- ½ teaspoon garam masala
- 1 tablespoon paprika
- 1 teaspoon chili powder
- 3 tablespoons yogurt
- 2 tablespoons vegetable oil
- salt
For the chicken and the sauce
- 3 tablespoons vegetable oil
- 1 large onion , chopped
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 teaspoon ground turmeric
- 2 teaspoons ground coriander
- 1 tablespoon paprika
- 1 teaspoon chili powder
- 1 tablespoon tomato paste
- 2 large tomatoes , peeled, seeded and chopped
- 1 teaspoon lemon juice
- ¾ cup heavy cream
- ¼ teaspoon garam masala
- 2 tablespoons chopped cilantro
- salt

Instructions
- Place the chicken pieces in a large bowl and season with salt.
- Rub them by hand with the lemon juice.
- Cover with plastic wrap and marinate for 15 minutes in the refrigerator.
- Meanwhile, place the garlic, ginger, cumin, cilantro, garam masala, chili powder and yogurt in a blender.
- Blend until smooth. Add this mixed mixture to the chicken. Add the oil and mix well.
- Cover with plastic wrap and marinate for 6 hours in the refrigerator.
- Preheat a BBQ grill.
- Thread the marinated chicken pieces on skewers.
- Grill the chicken, turning occasionally, for 15 minutes or until cooked through.
- Remove the chicken from the skewers. Set aside.
Sauce
- Heat the oil in a large skillet over medium heat.
- Add the onion.
- Sauté for 2 to 3 minutes, stirring, or until lightly browned.
- Add the ginger paste.
- Sauté for 2 minutes, stirring continuously.
- Add the turmeric, ground coriander, paprika and red pepper powder.
- Sauté for 1 minute. Add the tomato paste and sauté for a few seconds. Add the chopped tomatoes. Sauté until mixture is tender.
- Lower the heat and simmer for 2 minutes.
- Add the lemon juice and cream. Add enough water to make a thick sauce. Season with salt.
- Simmer, stirring occasionally, for 3 to 4 minutes. Add more water if needed.
- Add the garam masala and half the cilantro.
- Stir in the grilled chicken.
- Garnish with the remaining cilantro leaves.
- Serve with naan, roti and/or rice.
