Ingredients
- 2 tablespoons vegetable oil
- 1 onion minced, small
- 1-2 Anaheim pepper seeded and minced, or Jalapeno pepper
- 1 clove garlic minced
- 2 tablespoons cornstarch
- 4 cups chicken broth
- 1 chicken breast cut into small pieces, boneless, skinless
- 1 chicken thigh cut into small pieces, boneless, skinless
- 3 corn tortillas minced, 6 inch
- 2 tablespoons lime juice
- 1 tomato diced, large
- 1/2 teaspoon cumin ground
- 1/2 teaspoon ground cayenne pepper
- 1/4 teaspoon oregano
- 1/4 teaspoon salt
- 8 ounces mild cheddar cheese shredded
Garnishes:
- cheddar cheese shredded
- green onion chopped
- tortilla strips
Instructions
- In a large saucepan, drizzle oil over medium-low heat. Add the onion, pepper, and garlic. Cook, stirring occasionally, until the onions and peppers soften.
- In a medium bowl, whisk together the cornstarch and chicken broth. Pour into the pot. Stir in the chicken, tortillas, lime juice, tomatoes, cumin, cayenne, oregano, and salt. Increase heat to medium and whisk in the cheese until fully melted and incorporated. Once bubbling, reduce heat back to medium-low and simmer, stirring occasionally, for 20 minutes.
- Serve immediately topped with desired garnishes.
