Chicken Yi Mein Noodles

Ingredients
- 2 Yi Mein noodles small pack 8 oz
- 2 big pieces Chicken thighs boneless & skinless
- 3 cups Sprout beans
- 2 ticks green onion
- 2 lices ginger (cut into small strips)
- ½ tablespoon sesame oil
- ½ tablespoon vegetable oil
- 1/16 teaspoon salt (For stir fried sprout beans)
- ¾ cup water
Marinated Chicken Sauce:
- 3 tablespoons oyster sauce
- ⅛ teaspoon salt
- ½ tablespoon sugar
- 2 tablespoons soy sauce
- 2 teaspoons cornstarch
Instructions
- Cut 2 sticks of green onion into strips.
- Cut 2 big pieces of boneless and skinless chicken thighs into small strips.
- Then, put the chicken into a container. Add 3 tablespoons of oysters sauce, ⅛ teaspoon of salt, 2 tablespoons of soy sauce, ½ tablespoon of sugar, 2 teaspoons of cornstarch.
- Mix it well and let it marinade for at least 15 minutes before cooking.
- Boil some water in a pot until water is bubbling. Then add 2 blocks of yi mein noodles (8 oz) and let it cook for 2-3 minutes. Turn off the fire and cover the lid and wait for a couple minutes. After that, drain the water and put the cooked yi mein noodles on a plate. Set it aside.
- Pour ½ tablespoon of vegetable oil into a pan, turn on fire to medium high. Add 3 cups of washed sprout beans and 1/16 teaspoon of salt. Stir fry for a couple minutes. After that, put cooked sprout beans on top of the noodles and set it aside.
- Next, pour ½ tablespoon sesame oil into a pan. Then, turn on medium high fire, pour the marinated chicken and 2 ginger slices that cut into small strips. Stir fry the chicken a little bit.
- The following step, add ¾ cup of water and keep stirring until the chicken is cooked. Then, turn off the fire. (You can add green onion to the chicken and sauce now or topping later). After that, pour the cooked chicken and sauce over the sprout beans and noodles.
Notes
- Boil water in a pot and put yee mein noodles in it. Remember don't over cook yi mein, so it can maintain its elasticity and chewy texture.
- The best to marinate chicken for 15 minutes before cooking.
- Pour the chicken sauce over the sprout beans and noodles when it is ready to serve.
