Description
The tea is prepared by boiling water with thin slices of ginger and optionally red dates, allowing the ingredients to infuse for about 15 minutes. Brown sugar, preferably Chinese brown or black sugar, is added during the final simmer to sweeten the tea, but if honey is used as an alternative sweetener, it should only be added after cooking to preserve its beneficial properties.

Ingredients
- 2 cups water
- 15 grams ginger (thinly sliced)
- 15 grams Chinese red dates (halved, optional)
- brown sugar to taste, or honey; Chinese brown/black sugar
Instructions
- Add the water to a small pot along with the ginger and dates. Cover and bring to a boil.
- Once boiling, reduce the heat and simmer for 15 minutes. Add the Chinese brown sugar to taste (if using honey, just skip this step––you’ll wait to add the honey later). Cover and simmer for another 5 minutes.
- Strain the tea into a mug. Let the tea cool to drinkable temperature, but the goal is to drink it while it’s still hot!
Notes
- If using honey as a sweetener, add it just before drinking to preserve its health benefits.
- Do not boil honey with the tea as cooking reduces its beneficial properties.
- Chinese brown or black sugar is preferred for authentic flavor but can be adjusted according to taste.
