Instructions
- In a blender, combine the chipotle peppers, adobo sauce, garlic, oil, lime juice, cumin, oregano, pepper, and salt. Blend until smooth to create the marinade.
- Place the steak in a large zip-top bag and pour in the marinade. Seal the bag and turn to coat evenly. Refrigerate for at least 4 hours or up to 12 hours.
- Remove the steak from refrigerator 30 minutes before cooking to allow it to come to room temperature.
- Preheat the grill to high heat. Remove steak from marinade, discarding excess marinade.
- Grill steak for 5-6 minutes per side for medium-rare, or until desired doneness.
- Let rest for 10 minutes, then slice and chop against the grain into small bite size pieces.
- Serve over rice, tortillas or on a salad. Enjoy!
Notes
- Marinating for the full 12 hours intensifies the chipotle flavor, but 4 hours will still provide a good amount of flavor.
- Chipotle uses Mexican Oregano but Italian Oregano tastes great as well and is usually more readily available but either will work in this recipe.
- Make sure your grill is fully preheated to achieve a really good sear.
- Refrigerate any leftovers in an airtight container for up to 5 days.
