Chocolate Covered Blueberries

Dark chocolate covered blueberries are a satisfying sweet snack or easy dessert. I make this deliciously fruity treat with only 3 simple ingredients.

  • 3.5 oz dark chocolate 100g, or a generous ½ cup of dark or sugar free chocolate chips. I used 90% Lindt ***
  • 1 teaspoon coconut oil 4.5g
  • ¾ cup fresh blueberries 120g, or use frozen

Instructions

  1. Wash and dry the blueberries. (They need to be fully dry or the chocolate can seize!)
  2. Break the chocolate into pieces and put them in a microwave-safe bowl. Add the coconut oil and melt in 30 second intervals in the microwave, about 90 seconds-2 minutes max. Stop as soon as the chocolate is half-melted. Stir and let the rest melt naturally. Allow to cool slightly (so not boiling but still runny). No microwave?   3. Stir the blueberries into the melted chocolate with a spoon.
  4. Spoon heaps of 3-5 blueberries each (depending on the size of the berries) onto a parchment paper-lined baking tray.
  5. Let the clusters set in the fridge for 15 minutes.

Notes

  • 5g net carbs per cluster. Makes 20 clusters. (1.4g net carbs and 25 calories if using sugar free chocolate chips).
  • ***90% chocolate is not very sweet. Option to add up to 10 drops of stevia glyerite or 1 tablespoon of allulose to the melted chocolate.
  • How to melt chocolate in a water bath: Place a small bowl with the chocolate pieces and coconut oil into a larger bowl or saucepan that you have filled with boiling water. The water heats the chocolate from the outside and causes it to melt slowly.
  • Option to spread the entire mix onto the baking tray and break into bite-sized pieces after the chocolate has set.
  • Store in an airtight container in the fridge for up to 1 week.
