These 3 ingredient chocolate covered pineapple rings are the perfect quick and easy no-bake Summer treat. Easily customize this healthy, gluten-free, and vegan-friendly recipe.

Ingredients
- 1 ripe pineapple cut, cored, and sliced into 1-inch rings
- 6 ounces dark or semi-sweet chocolate chips or bar (dairy-free chocolate if needed)
- 1 tablespoon coconut oil
- Topping ideas: shredded coconut or coconut flakes, crushed nuts, a drizzle of nut butter, mini chocolate chips, sprinkles, or flaky sea salt

Instructions
- Line a large baking sheet with parchment paper and set aside.
- Cut, core, and sliced the pineapple into 1-inch-sized rings.
- In a microwave-safe bowl, melt the chocolate chips and coconut oil in 20-second intervals. Stir after each interval. Repeat the 20-second intervals until the chocolate is completely smooth and melted. Do not overheat the chocolate it will burn!
- Dip each pineapple ring into the chocolate - I like dipping it ¾ of the way, leaving some fresh pineapple exposed.
- Sprinkle with coconut, your favorite crushed nuts, sea salt, or an extra drizzle of chocolate.
- Add each one to the lined baking sheet and place the tray in the fridge for at least 30 minutes so the chocolate sets.
- Store in the fridge for up to 3 days or in the freezer for up to 3 months.
Notes
- Cut your pineapple into rings, spears, or cubes. All work! So if cutting your pineapple into rings is too much, then cut it into spears and use a popsicle stick or skewer to dip and serve the chocolate-covered pineapple.
- Canned Pineapple: I recommend using fresh pineapple for the best flavor and texture; however, you can use canned pineapple rings. Drain the can and pat the pineapple rings dry with a paper towel before dipping them in chocolate. If you don’t do this, the chocolate will not stick to the sides of the pineapple.
- Frozen Pineapple: I do NOT reccomend using it.
- Vegan: You can make this recipe vegan by using dairy-free chocolate.
- White Chocolate: You can use dark, milk, semi-sweet, or white chocolate for this recipe.
- Storing: For best results, keep any leftover chocolate-covered pineapple rings in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months. If enjoying from frozen, I recommend letting the rings thaw in the fridge or at room temperature for 10 minutes before enjoying.
