- 20 strawberries medium size
- 200 g dark chocolate 7 oz, 70 % cocoa. You can also use white chocolate if you like. In this case divide the amount in half, 100 g dark chocolate and 100 g white chocolate.

- Quickly wash the strawberries one by one under a gentle stream of cold water. Then dry them carefully with paper towels. The strawberries must be well dried to allow the chocolate to stick well to the surface of the fruit.
- Chop all the chocolate. It does not have to be very fine, but in small pieces it will melt faster. Place half of the chopped chocolate in a double boiler to melt. Once melted, remove from heat and add the other half of the chopped chocolate to the dissolved one. Continue stirring until the chocolate reaches a temperature of 31-32°C (89°F).
- Take the strawberries and dip them into the melted chocolate one at a time, holding them by the stem. You must reach just below the leaves so that a red portion remains uncovered.
- Gently place the covered strawberries on a wire rack to cool and set. If the temperature outside is high -- or simply to speed up the process -- you can place the strawberries in the refrigerator to solidify. About 15 minutes will do the trick.
- When the chocolate is hard and crisp around the strawberries, place the them on a serving platter and serve. You can also use white chocolate if you prefer. In this case, divide the amount in half: 100 g dark chocolate and 100 g white chocolate, and follow the steps above.
