- 6 cups Rice Krispies cereal
- 1 10 ounce package marshmallows
- ¼ cup ½ stick unsalted butter
- 1 cup creamy peanut butter
- ½ cup semi-sweet chocolate chips
- ¼ cup milk chocolate chips or white chocolate chips
Instructions
- Prepare pan: Line a 9x13 inch baking pan with parchment paper.
- Melt butter and marshmallows: In a large saucepan over medium-low heat, melt the butter. Add the marshmallows and stir constantly until melted and smooth.
- Add peanut butter: Remove the saucepan from the heat and stir in the peanut butter until well combined.
- Add Rice Krispies cereal: Add the Rice Krispies cereal to the marshmallow mixture and stir until the cereal is evenly coated.
- Melt chocolate chips: In a separate microwave-safe bowl, melt the semi-sweet and milk chocolate chips together in 30-second intervals, stirring after each interval, until smooth.
- Assemble roll: Pour half of the Rice Krispies mixture into the prepared pan and press it into an even layer. Drizzle half of the melted chocolate over the Rice Krispies layer. Top with the remaining Rice Krispies mixture and press it down firmly. Drizzle the remaining melted chocolate over the top.
- Chill: Cover the pan with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the roll to set completely.
- Slice and serve: Once chilled, use the parchment paper to lift the Rice Krispies mixture out of the pan. Cut the roll into slices using a sharp knife.
