Chocolate Thumbprint Cookies

Holiday season calls for delicious treats, and these Chocolate Thumbprint Cookies are the perfect answer to your sweet cravings. The combination of dark chocolate, a soft cookie base, and a rich chocolate ganache center makes these cookies an absolute delight. Not to mention, they are incredibly easy to make and are bound to be the star of your Christmas party.

Ingredients

Servings
  • 1 Cup unsalted butter softened
  • 1 Cup sugar
  • 1 large egg
  • 2 tsp pure vanilla extract
  • 2 Cup flour
  • 1/2 Cup dark chocolate cocoa powder
  • 1 1/2 tsp kosher salt
  • 2 Cup sugar to roll the cookie dough in
  • 1 Cup Christmas sprinkles optional

Chocolate ganache

  • 1 Cup semi-sweet chocolate chips
  • 1/2 Cup heavy whipping cream

Instructions

  1. Preheat oven to 350 degrees and line 2 cookie sheets with parchment paper.
  2. Using a large bowl, beat together the butter and sugar until light and fluffy.
  3. Beat in the egg, vanilla until combined.
  4. In a medium bowl, whisk together the flour, cocoa powder, and kosher salt.
  5. Gradually beat in the dry ingredients until combined.
  6. Pour the 2 C sugar into a small bowl.
  7. Using a small ice cream scooper, scoop the cookie dough into your hand and roll into a ball.
  8. Roll the cookie dough ball in the sugar.
  9. Place onto the cookie sheet and use a tablespoon to make an indent into the center of the cookie dough ball.
  10. Place into the oven and bake for 8 minutes.
  11. Allow cooling completely.

Chocolate ganache

  1. Using a small pot, bring the heavy whipping cream to a simmer.
  2. Pour over the chocolate chips into a heatproof bowl.
  3. Allow sitting for a minute before whisking until smooth.
  4. Allow the ganache to sit to cool for 5 minutes.
  5. Spoon into the piping bag.
  6. Fill in the center of the cookie with the ganache.
  7. Sprinkle some Christmas sprinkles on top.
  8. Enjoy!
