  • ¾ cup cubed unsalted butter
  • 12 ounces chopped bittersweet or semisweet chocolate
  • 6 large room temperature eggs
  • ¾ cup granulated sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • unsweetened cocoa powder for dusting
  • Whipped Cream for serving
  • fresh berries for serving

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit. Butter the bottom and sides of a 9-inch springform pan, then dust the bottom and sides with cocoa powder. Set aside.
  2. In a large, microwave-safe bowl, combine ¾ cup cubed unsalted butter and 12 ounces chopped bittersweet or semisweet chocolate. Microwave for 90 seconds, stopping every 30 seconds to stir well until completely melted and smooth. Stir in 1 teaspoon vanilla extract, then set the bowl aside to cool slightly.
  3. In a separate large bowl, combine 6 large room temperature eggs, ¾ cup granulated sugar, and ¼ teaspoon salt. Using a hand mixer or a stand mixer fitted with the paddle attachment, beat on medium-high speed for 6 minutes until it becomes thick and is a pale yellow color.
  4. Add half of the chocolate mixture to the eggs mixture, stirring with a large spoon or spatula to combine. Fold in the remaining chocolate, then pour the batter into the prepared springform pan.
  5. Bake for 30-35 minutes, just until the center barely jiggles, the top is no longer shiny, and a toothpick inserted into the center comes out nearly clean with only a few crumbs.
  6. Let the torte cool completely, then run a sharp, thin knife around the inside perimeter of the pan before removing the springform ring. Dust the top with unsweetened cocoa powder and serve with whipped cream and fresh berries.
