Chocolate Zucchini Cake with Cream Cheese Frosting

CHOCOLATE ZUCCHINI CAKE with CREAM CHEESE FROSTING is how I sneak zucchini into my kids!!! They have no idea and it tastes out of this world good!!!!

Ingredients

Servings
  • 1 ½ cups all-purpose flour plus 1 tbsp for coating the chocolate chips
  • ¼ cup unsweetened cocoa powder
  • ½ tsp salt
  • ½ tsp baking soda
  • ¼ tsp allspice
  • ½ tsp cinnamon
  • ½ cup extra virgin olive oil
  • 1 ¼ cups granulated sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 medium zucchini grated and then squeezed dry (if hiding from kids you may want to chop the zucchini even smaller)
  • ½ cup semisweet chocolate chips
  • ½ recipe for Best Cream Cheese Frosting

Instructions

  1. preheat the oven to 350 degrees F
  2. grease a 9x9 inch square baking pan then coat with flour, shaking out the extra flour
  3. in a medium mixing bowl whisk together flour, cocoa powder, salt, baking soda, allspice and cinnamon
  4. in a large bowl beat together olive oil, sugar, eggs and vanilla until light and fluffy, about 4 to 5 minutes
  5. add in the flour mixture and mix on low until just combined
  6. pour in the zucchini pieces and stir until evenly mixed through
  7. in a small bowl toss the chocolate chips with 1 tbsp of flour until coated
  8. add the chocolate chips into the cake batter and fold in with a spoon
  9. pour batter into the baking pan
  10. bake for 35 to 40 minutes or until a toothpick inserted into the center of the cake comes out clean
  11. allow to cool to the touch before topping with cream cheese frosting
