Chunky Gazpacho (Chilled Tomato Soup)

This Chunky Gazpacho features a chilled blend of tomato juice and freshly chopped vegetables like tomato, cucumber, green pepper, and onion. Flavored with garlic, red wine vinegar, olive oil, and seasonings including Tabasco and black pepper, it offers a refreshing, cool texture that balances acidity, spice, and richness. Optional toppings such as sliced avocado, sour cream, garlic croutons, or shrimp add variety to the dish, making it suitable for warm weather or light meals.

Description

Chunky Gazpacho (Chilled Tomato Soup) combines a base of tomato juice with fresh chopped tomato, cucumber, green pepper, and sweet onion for texture and freshness. Minced garlic adds pungency, while red wine vinegar and olive oil contribute acidity and smoothness, respectively. Seasoned with kosher salt, black pepper, and a hint of Tabasco, the soup delivers subtle heat and balance. After mixing, the gazpacho is refrigerated to chill for about an hour, allowing flavors to meld. The chunky texture emphasizes the freshness of the vegetables contrasting with the smooth tomato juice, creating a cool, satisfying soup. Optional garnishes like avocado slices, sour cream, garlic croutons, or cooked shrimp can personalize the dish for varied tastes and textures.

  • tsp Tabasco sauce (to taste)
  • tsp black pepper (to taste)
  • 1 lice avocado (optional to serve, as well as: sour cream, garlic croutons, or cooked shrimp)

Instructions

  1. Chop the tomato, cucumber, green pepper, and onion by hand or in a food processor.
  2. Place the chopped veggies in a bowl, with the minced garlic, then add the vinegar, olive oil, salt, tabasco, and black pepper to taste.
  3. Stir well, cover and refrigerate for about an hour to chill.
  4. Serve with any of the desired suggested toppings, or simply a slice or two of green pepper.

Notes
