Churro Cupcakes Recipe

Churro Cupcakes are delicious made from scratch cupcakes that is absolutely amazing. These cupcakes bring together the flavors of a cinnamon cupcake with cinnamon sugar on top. These cupcakes are perfect for a party or picnic.

Ingredients

  • 1 cup sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1 Tablespoon vanilla extract
  • 2 cups flour
  • 2 tespoons ground cinnamon
  • 3/4 teaspoon salt
  • 1/2 cup heavy cream
  • 1/2 cup sour cream

Toppings for cupcakes

  • 1 cup melted butter
  • 2 cup sugar
  • 3 Tablespoons ground cinnamon
  • Fresh or frozen churros

Cinnamon Frosting

  • 2 cups unsalted butter
  • 5 cups powder sugar
  • 1 Tablespoons ground cinnamon
  • 5 Tablespoons heavy whipping cream
  • 2 teaspoons vanilla
  • 1 bottle salted caramel sauce

Instructions

Cupcake directions

  1. Preheat oven to 350 degrees and line cupcake pan with liners.
  2. In a standing mixer beat sugar and butter until creamed.
  3. Add egg and mix until fully incorporated.
  4. Beat in vanilla extract, salt, baking soda, baking powder, and cinnamon.
  5. Combine the heavy cream into the wet mixture.
  6. Add in flour, a little at a time.
  7. Add in the sour cream.
  8. Spoon batter about 3/4 full.
  9. Bake in the oven for about 22 minutes or until the center of the cupcake comes out clean with a toothpick.

Frosting directions

  1. Combine all ingredients into a standing mixer and mix on low speed.
  2. until combined and stiff peaks form.
  3. Scoop the frosting into the piping bag.
  4. Melt 1 Cup of butter into a microwave safe bowl.
  5. Mix in 2 Cup of sugar and the 2 tbsp ground cinnamon into another bowl.
  6. Dip the top of the cupcakes into the melted butter and then dip it into the cinnamon sugar mix.
  7. Frost the cupcakes with the cinnamon frosting.
  8. Drizzle caramel sauce and top with a churro.
