Churro Funnel Cakes

  • 4 cups vegetable oil for frying
  • 1 cup water
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 cups Whipped Cream
  • 1/2 cup Caramel sauce

Instructions

  1. In a large, heavy-bottomed pot or deep fryer, heat 4 cups vegetable oil to between 350°F and 375°F (175°C and 190°C). Use a thermometer to monitor the temperature.
  2. In a large saucepan, combine 1 cup water, 1/2 cup butter, 1 teaspoon vanilla extract, and 1/4 teaspoon salt. Heat over medium heat until the butter is completely melted and the mixture just begins to simmer.
  3. Remove the saucepan from the heat. Add 1 cup all-purpose flour all at once and stir vigorously with a wooden spoon until the mixture forms a smooth dough. Add the eggs one at a time, stirring well after each addition until fully incorporated and the dough is smooth.
  4. Transfer the dough to a large pastry bag fitted with a large star-shaped tip. Pipe the dough directly into the hot oil in a spiral motion, creating a funnel cake shape. Pinch off the dough once the desired size is reached.
  5. Fry the funnel cakes until they puff up and turn golden brown, about 2 to 4 minutes, turning halfway through to ensure even cooking on both sides. Carefully remove the funnel cakes from the oil using tongs or a slotted spoon, and place them on a plate lined with paper towels to drain for 30 to 60 seconds.
  6. In a shallow dish, combine 1 cup granulated sugar and 1 teaspoon ground cinnamon. While the funnel cakes are still warm, dip them into the cinnamon sugar mixture, coating both sides evenly. Shake off any excess sugar.
  7. Serve the funnel cakes immediately. Top each one with a generous dollop of whipped cream and a drizzle of caramel sauce
