Cider Wassail

Cider wassail is a warm and comforting blend of apple cider, orange juice, and spices.

Ingredients

  • 1/2 gallon apple cider
  • 2 cups orange juice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon allspice
  • 1/2 teaspoon ground cloves
  • 4 cinnamon sticks
  • 2 star anise
  • 1 orange sliced
  • 1 apple sliced

Instructions

  1. In a medium pot over medium-high heat, stir together cider and juice.
  2. Add ground cinnamon, allspice, and ground cloves; whisk until combined.
  3. Add cinnamon sticks, star anise, and orange and apple slices.
  4. Bring mixture to a boil. Reduce temperature to medium-low and allow to simmer for 45 minutes.
  5. Before serving, remove cinnamon sticks and star anise with a slotted spoon.
  6. Serve or transfer to a crock pot to keep warm.

Notes

  • Apple cider: I like to use fresh, refrigerated apple cider when it's available. You could also use shelf-stable cider.
  • Spices: Feel free to vary the spices according to your tastes.
  • Apple: I like to use a cooking apple so that it holds together better.
