Cilantro Lime Rice in Instant Pot

Fluffy, fragrant, and easy to make cilantro lime rice in Instant Pot. This recipe is great to serve as a side dish to tacos, burrito bowls, enchiladas, and much more.

Ingredients
- 1 tablespoon vegetable oil or extra virgin olive oil
- 1 teaspoon minced garlic
- 1 ½ cup (300 grams, 10.58 ounces) basmati rice
- 2 ¼ cup water
- 2 teaspoons (5 grams, 0.18 ounces) lime zest
- 1 teaspoon salt or to taste
- 1 ½ cups (30 grams, 1.06 ounces) fresh cilantro (coriander) leaves roughly chopped
- 1 ½ tablespoons lime juice or to taste
Instructions
- Rinse your rice until the water runs clear. Completely drain off all water. Set aside.
- Turn on your Instant Pot to saute mode. When the inner pot is hot, add the vegetable oil, minced garlic, and basmati rice. Saute for 1 to 2 minutes. Press cancel on your Instant Pot.
- Add the water, lime zest, and salt. Mix together. Taste for seasoning, add more salt if desired. Make sure no rice is stuck to the bottom of the pot.
- Close the lid of the Instant Pot and place the steam release valve in the sealing position. Select Pressure Cook, high pressure, for 3 minutes. The Instant Pot will take about 5 to 10 minutes to come to pressure. After this, it will start to count down.
- When the cook time has finished, press cancel. The screen should say OFF.
- Allow the Instant Pot to naturally release pressure for at least 10 minutes (or until the silver pin has dropped). After 10 minutes, you can quick release (manually release) any remaining pressure by turning the steam release valve to venting.
- Remove the lid of the Instant Pot when all pressure has been released and mix in the chopped cilantro and lime juice. Serve.
