A cilantro lime brown rice recipe made with coconut milk for added flavor! This easy Mexican rice can be made in a rice cooker or on the stove top.

Ingredients
- 1 ½ c. brown rice
- 2 c. chicken or vegetable broth
- 1 c. coconut milk
- 2 T. butter or olive oil
- ½ t. salt
- 2 T. lime juice
- 2 T. cilantro
- ¼ t. salt

Instructions
- Place brown rice, broth, coconut milk, butter or oil and ½ t. salt in a rice cooker and cook until tender.
- (You can also cook your rice the traditional stovetop method by: 1) bringing your broth and milk to a boil, 2) adding the rice, butter and salt, 3) let it return to a simmer, 4)cover, and cook for 16-20 minutes.)
- Once rice is done cooking add in lime juice, cilantro and salt. Enjoy!
