Description

The ingredients are puréed until smooth and seasoned with salt, with optional adjustments to spice or consistency by adding more water. The ginger is peeled easily with a spoon or substituted with fresh ginger paste, while jalapeño seeds can be omitted for less heat.

Ingredients

  • 4 cloves garlic peeled
  • 1 (1-inch) piece ginger peeled (see note 1, fresh
  • 2 cups cilantro loosely-packed, fresh
  • 1 cup mint loosely-packed, fresh
  • 1 jalapeno pepper stemmed and coarsely chopped (see note 2)
  • 2 tablespoons lime juice (from 1-2 limes)
  • 1 tablespoon water
  • 1 teaspoon granulated sugar
  • salt

Instructions

  1. In a food processor or blender, add garlic and ginger and pulse until coarsely chopped. Add cilantro, mint, jalapeño, lime juice, water, and sugar and pureé until smooth.
  2. Season to taste with salt (I like 1/2 teaspoon). Adjust consistency with additional water if desired.

Notes

  • To peel ginger easily, rub the skin with a spoon or substitute with fresh ginger paste.
  • Remove jalapeño seeds and membranes to reduce spiciness if preferred.
  • This recipe yields about ¾ cup of sauce, suitable for multiple uses.
  • Store leftovers refrigerated for up to 4 days or freeze for up to 3 months, thawing overnight.
