Cinnamon Apple Pancakes
Description
The Cinnamon Apple Pancakes recipe features a batter made from all-purpose and white whole wheat flours with baking powder and soda to create a light texture. The apple swirl is a sauce of warmed applesauce blended with brown sugar and cinnamon, which is added during cooking by swirling into the poured batter. Pancakes cook on a griddle or skillet until bubbles form and edges set, then flipped to finish cooking through.
The resulting pancakes have the softness and mild sweetness of the batter enhanced by pockets of cinnamon-spiced applesauce. The apple swirl introduces moistness and a gentle fruity flavor with cinnamon aroma. Serving with extra sauce or maple syrup adds moisture and sweetness as desired.
The sauce should be prepared first and cooled slightly to avoid thinning the batter. Portion sizes range from 1/4 to 1/2 cup per pancake, depending on desired thickness. Doubling the sauce amount might be necessary if using it generously as a topping. These pancakes suit a leisurely breakfast or brunch where warm, spiced flavors are welcome.
Ingredients
- 1 cup all-purpose flour
- 1 cup white whole wheat flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 cups milk
- 2 egg
- 3 tablespoons butter melted and cooled
- 1 teaspoon vanilla extract
Cinnamon Apple Swirl
- 1 cup applesauce unsweetened
- 2/3 cup brown sugar
- 1 tablespoon cinnamon
Instructions
- Prepare sauce before making batter and set aside. In a small sauce pan on medium heat warm apple sauce and brown sugar together, stirring until sugar has melted. Add cinnamon, mixing well. Let cool slightly while preparing batter.
- In a large bowl whisk together flours, baking powder, baking soda and salt. In a medium bowl combine milk, eggs, vanilla, melted cooled butter and vanilla extract. Add egg mixture to flour mixture to make batter.
- Place cinnamon-apple sauce in a piping bag or Ziploc bag cutting the corner.
- Spray grill or skillet with cooking spray or grease with butter on medium heat. Add 1/4 - 1/2 cup servings of batter to pan. Add a swirl of the sauce starting from the center of the pancake to each pancake. Flip when bubbles form at the edges of the pancake. Serve pancakes with remaining sauce or top pancakes with your favorite maple syrup.
Notes
- Prepare the cinnamon apple sauce before the batter and let it cool slightly for ease of swirling.
- Double the sauce if using it generously as a topping beyond the swirls inside the pancakes.
- Use a piping bag or a small corner-cut plastic bag to add the sauce swirl on uncooked pancakes.
