Description
This recipe begins by simmering bone-in beef pieces to create a rich broth base. Meanwhile, grated carrots, onions, and beets are sautéed in oil to soften and develop flavor, then added to the simmering pot along with rinsed kidney beans. Potatoes are added next to cook through, followed by thinly sliced cabbage for a touch of texture. The seasoning includes salt, pepper, vinegar, and ketchup, which deepen the flavor while contributing acidity and sweetness.

Ingredients
- 1 lb beef bone-in
- 4 tbsp neutral cooking oil generic cooking oil
- 2 carrot grated, medium
- 1/2 onion finely chopped, large
- 1 beet peeled and grated or sliced thinly, large
- 16 oz Kidney Beans rinsed and drained, canned
- 3 potato sliced into bite-sized pieces, medium
- 1/4 cabbage thinly chopped, head of medium
- 1 tbsp salt adjust to taste
- 1 tsp black pepper adjust to taste, ground
- 1 tbsp vinegar
- 2 tbsp ketchup
Instructions
- In a large pot, bring 4 quarts of water to a boil. Slice the beef into 2-inch pieces and add to pot; let it simmer for about 20 minutes.
- In a large skillet, sauté the carrots, onions and beets in 4 tablespoons of cooking oil. Sauté the vegetables until they are soft (7-10 minutes) and add them into the pot.
- Drain and rinse beans and add them to the pot. Simmer for another 15 minutes.
- Add in the sliced potatoes to the pot and cook for another 15 minutes.
- When the potatoes are nearly done cooking, add the thinly chopped cabbage to the pot. Next, season with salt to taste, ground pepper, vinegar, and ketchup. Let the borscht simmer for 10 more minutes.
- Serve the borscht with a dollop of sour cream or mayo. Enjoy!
