Cocoa, date and oat bites

Cocoa, date and oat bites are no-bake energy balls made by blending rolled oats, pitted Medjool dates, cocoa powder, smooth peanut butter, salted peanuts, desiccated coconut, salt flakes, maple syrup, and coconut oil. Rolled into small balls and coated with coconut, nuts, or cocoa, they offer a chewy, sweet, and slightly nutty snack that firms up after chilling.

Description

This recipe blends wholesome ingredients known for natural sweetness and texture. Medjool dates provide a sticky, caramel-like base that binds rolled oats, cocoa powder, peanut butter, and a mixture of salted peanuts and desiccated coconut together. The addition of maple syrup and coconut oil helps with sweetness and consistency, while a pinch of salt flakes balances the flavors.

Processed in a food processor until combined but still somewhat coarse, the mixture is shaped by hand into bite-sized balls. Rolling these in desiccated coconut, chopped nuts, or cocoa powder adds visual appeal and extra texture. Chilling in the refrigerator firms them up, making them easy to handle and enjoy.

These bites are convenient portable snacks, good for a quick energy boost or dessert alternative. Storing them in an airtight container in the fridge keeps them fresh for about a week.
