Cod Scrambled Eggs

Cod Scrambled Eggs is a savory breakfast or light meal combining pan-seared cod chunks with gently cooked scrambled eggs and sautéed leeks. The cod is seasoned and browned for flavor, then flaked into the pan with softened leeks before gently scrambling eggs in the same pan. The result is tender eggs interspersed with flaky fish and mild, sweet leek slices, seasoned subtly with salt and seasoning salt.

Description

The preparation starts by soaking sliced leeks in cold water to remove grit, while the cod is dried and seasoned. The cod fillet is cooked in olive oil over medium-high heat until golden and then flipped to brown the other side. After turning off the heat, the fish is broken into large chunks.

Next, the drained, dried leeks are added to the pan and cooked on medium heat until soft. The pan is then cooled briefly before adding whisked eggs mixed with water for moisture. Returning the pan to low heat, the eggs are poured in and left undisturbed until the bottom begins to set, then gently stirred to scramble without overcooking. This method results in creamy scrambled eggs with tender pieces of cod and softened leeks.

This dish offers a balanced combination of flaky, lightly seasoned fish with soft eggs and mild, aromatic leeks. It is suitable for breakfast or a light meal and highlights freshness and gentle cooking techniques.

  • 1/2 cup leek thinly sliced
  • 6 ounces cod 1 large fillet, fresh
  • seasoning salt
  • 1 tablespoon olive oil divided, good-quality
  • 4 egg large
  • 1/2 tablespoon water
  • 1/4 teaspoon salt sea salt

Instructions

  1. Place the sliced leeks in a bowl and cover with cold water. Let stand while you make the fish.
  2. Dry the cod and sprinkle both sides with seasoning salt. Heat 1 teaspoon of the oil up in a large nonstick pan on medium-high heat. Add in the cod and cook until golden brown, about 2-3 minutes. Flip and repeat on the other side.
  3. Turn the heat down to medium-low and break the cod into large chunks. Add another 1/2 teaspoon of oil to the pan and drain the leeks, patting them dry. Add them to the pan and cook until soft, about 2-3 minutes.
  4. Remove the pan with the cod from the heat. Let cool for 5 minutes before continuing to cook.
  5. While the pan cools, whisk the eggs with the water until well mixed and slightly frothy.
  6. Put the pan back on the stove on low heat and add in the remaining 1/2 tablespoon of oil. Let the oil heat for 2 minutes.
  7. Pour the eggs into the pan and do not do anything to them until the bottom just begins to set. Then whisk. Do not touch them again until the bottom begins to set again. Repeat this step until the eggs are about 75% cooked.
  8. Once the eggs are 75% cooked, add in the salt and whisk. Repeat the process one or two more times until the eggs are 90% set and cooked. Then turn off the heat and continue whisking until the eggs are set but still nice and soft.
  9. Serve immediately and DEVOUR!
