Cold Tomato Soup Recipe

Ingredients

  • 2 cups canned tomato puree
  • ½ cup low fat buttermilk
  • ¼ cup fresh basil leaves
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons minced fresh garlic
  • salt and pepper to taste
  • Optional rosemary for garnish

Instructions

  1. In a food processor, add garlic, olive oil, and basil. Process into a thick paste.
  2. Add the remaining ingredients and continue processing until thoroughly mixed.
  3. Once the desired consistency is achieved, transfer into a serving bowl and chill in the fridge. Garnish and serve chilled.
