Levain
- 50 gms sourdough starter 1 ¾ oz
- 100 gms water lukewarm, filtered, 3 ½ oz
- 100 gms all-purpose flour or whatever flour you use to refresh your starter with, plain, 3 ½ oz
Bread Dough
- 150 gms levain 5 ¼ oz
- 300 gms water lukewarm, filtered, 1 ¼ cup
- 500 gms baker's flour I used plain flour, 4 cups
- 10 gms sea salt fine, ½ tbsp
- fine semolina flour for dusting
