  • 50 gms sourdough starter 1 ¾ oz
  • 100 gms water lukewarm, filtered, 3 ½ oz
  • 100 gms all-purpose flour or whatever flour you use to refresh your starter with, plain, 3 ½ oz

Bread Dough

  • 150 gms levain 5 ¼ oz
  • 300 gms water lukewarm, filtered, 1 ¼ cup
  • 500 gms baker's flour I used plain flour, 4 cups
  • 10 gms sea salt fine, ½ tbsp
  • fine semolina flour for dusting
