Coriander Butternut Squash Soup

Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 1 butternut squash cubed
  • 1 tsp Turmeric
  • 1 tsp coriander powder
  • 1 tsp cinnamon
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 4-5 cups vegetable stock

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Saute onion until translucent.
  3. Add butternut squash cubes and saute for another 5-6 minutes.
  4. Add all the spices, saute for 2 minutes.
  5. Add vegetable stock and cook for 20-25 minutes, until butternut squash is fully cooked.
  6. Turn the heat off, let the soup sit for 15 minutes and then blend it in a blender.
  7. Serve warm.
