This Coronation Chickpea Sandwich recipe has a light curry flavor. Vegan version of the classic 1950s sandwich made for Queen Elizabeth II.

Ingredients
- 4 tablespoons Vegan mayo
- 1 tablespoon mango chutney
- 1 teaspoon curry powder mild
- 3 tablespoon raisins chopped
- 3 tablespoon dried apricots chopped
- 1 can chickpeas drained and rinsed⠀, 14oz/400g
- salt to taste⠀
- black pepper to taste⠀
- 8 lices bread
- lettuce
Instructions
- Mix the mayo, chutney and curry powder in a bowl. Stir in the raisins & apricots.⠀
- Mash the chickpeas slightly and stir into the mixture, then season with salt and pepper.⠀
- Serve in a sandwich with lettuce. Enjoy.⠀
Notes
- If you decide to cook the chickpeas yourself, make sure they are cooked well enough to mash slightly into the salad as chickpeas that are not cooked properly will not mash well.
- Add as little or as much of the seasonings as you enjoy, and taste along the way for best results.
- This salad is best served cold after chilling for at least 2 hours in the fridge so all of the flavors can come together.
