Instructions
- In a large mixing bowl, whisk 2 large eggs until well combined. Pour in 1 cup milk, 1 cup water, and 1/2 teaspoon vanilla extract and whisk until well blended. Add in 1/4 cup granulated sugar, 1 tablespoon baking powder, and 1/4 teaspoon salt and whisk until fully combined. Gradually add in 3 cups all-purpose flourwhisking until the batter is smooth and free of lumps.
- Adjust the heat as needed to maintain a consistent 375℉ temperature. Pour vegetable oil into a heavy skillet or deep frying pan, ensuring the oil covers the bottom by 1/2 to 1 inch. Heat the oil to 375°F (190°C) over medium-high heat. Adjust the heat as necessary to maintain a consistent temperature.
- Use a ladle to transfer the batter to a funnel or squeeze bottle. If using a funnel, plug the spout with your finger and ladle in about 1/2 cup of batter at a time. Drizzle the batter into the hot oil in a spiral motion to form a disc.
- Fry each funnel cake for approximately 2 minutes per side, or until golden brown. Use caution when flipping the funnel cakes to avoid splashing hot oil.
- Once both sides are golden brown, transfer the funnel cakes to a paper towel-lined plate or baking sheet to drain for about 2 minutes. Dust with powdered sugar, drizzle with honey, or add your favorite toppings before serving.
