Cozy Celery Soup Recipe

Cozy Celery Soup blends cooked celery, potatoes, onion, and garlic into a smooth, creamy soup with a mild herbaceous note from parsley. Simmered in chicken or vegetable stock, it offers a gentle, comforting flavor profile enhanced by optional dill and sour cream toppings. The soup’s texture is velvety, created by blending soft vegetables after simmering, making it warming and mild enough as a starter or light meal.

Description

This Cozy Celery Soup begins by sautéing onions and garlic in butter to build a flavor base, followed by simmering chopped celery and diced potatoes in stock until soft. Adding parsley before blending imparts a fresh green aroma and mild herbal depth. The vegetables are pureed until smooth, yielding a creamy, rich soup without cream.

The combination of celery’s mild bitterness balanced by the earthiness of potatoes results in a gentle, soothing taste. Toppings of sour cream and fresh dill add tang and brightness, complementing the soup’s overall mellow profile.

This soup suits a light lunch or starter, especially in cooler weather when a nourishing, smooth meal is welcome. The recipe allows flexibility with dairy-free or Whole30 adaptations by substituting butter and omitting sour cream.
