Cranberry Orange Muffins

Ingredients

  • 2 naval oranges
  • 1 cup granulated sugar
  • 2 eggs
  • ½ cup Greek yogurt
  • ¼ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 ¼ cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp kosher salt
  • ½ cup dried cranberries

Instructions

  1. Zest both oranges and rub the zest into the granulated sugar with your fingers in a small mixing bowl and set aside.
  2. Squeeze the juice out of the oranges until you have about ¼ cup of fresh orange juice.
  3. In a large mixing bowl mix together the orange juice, eggs, yogurt, oil, sugar and zest, and vanilla extract. Whisk together until a smooth mixture remains.
  4. In a separate bowl mix together the flour, baking soda, baking powder, salt and dried cranberries.
  5. Fold dry ingredients into wet with a flat spatula.
  6. Line 12 cups of a muffin pan with liners and scoop about ⅓ cup of batter into each of the cups.
  7. Place in the oven and bake at 325F for 30 minutes. Cool completely and enjoy!

Notes

  • To make these muffins gluten free use a 1:1 ratio gluten-free flour blend
  • To make them dairy free, use a vegan yogurt
