Creamy chicken and broccoli gnocchi
Description
This recipe starts with cubed chicken breast pan-seared until golden. Onion and crushed garlic are then cooked in the same pan until fragrant and translucent. Broccoli florets are added briefly, followed by chicken stock and cream to build a sauce. The chicken returns to the pan to simmer in the sauce for 7-10 minutes until cooked through and the sauce thickens slightly.
Lemon juice is stirred in at the end, adding brightness to the creamy sauce. The cooked potato gnocchi is combined in the pan, coating each piece in the sauce. Black pepper and salt season the dish to taste.
The resulting dish is creamy and rich with tender chicken pieces, tender-crisp broccoli, and pillowy gnocchi. It can be served alone or optionally topped with grated parmesan for added flavor.
Ingredients

- 4 chicken breast cubed
- 1 onion finely chopped
- 3 garlic crushed, cloves
- 1 broccoli broken into small florets, head
- ½ cup chicken stock
- ¾ cup cream alternatively use coconut cream
- 1-2 tablespoons lemon juice
- salt to taste
- black pepper to taste
to serve
- potato gnocchi cooked, or pasta alternative
Instructions
- In a large, deep frying pan, sauté the chicken in a splash of olive oil until golden brown. Remove from the pan and set aside.
- In the same pan, fry the onion and garlic until translucent and fragrant.
- Add the broccoli and cook for a minute or two before adding the chicken stock and cream.
- Add the chicken back to the pan and allow the sauce to cook and reduce for 7-10 minutes until the chicken is cooked through.
- Add the lemon juice and season to taste.
- Add the cooked gnocchi stir to combine.
- Serve topped with grated parmesan cheese (optional).
