Creamy Chicken Tortellini Soup

Ingredients

  • ¼ cup butter
  • 1 onion diced
  • ¼ cup all-purpose flour
  • 1 teaspoon poultry seasoning
  • ½ teaspoon dried rosemary
  • 5 cups chicken broth
  • 2 ribs celery diced
  • 2 carrots diced
  • 1 large potato peeled & diced
  • 1 bay leaf
  • 2 cups cooked chopped chicken or shredded chicken
  • cup heavy whipping cream
  • 6 ounces refrigerated cheese tortellini or frozen cheese tortellini
  • cup frozen green peas thawed, or green beans
  • salt and pepper to taste

Instructions

  1. Heat butter in a large pot over medium heat and cook onions until soft, about 3-4 minutes.
  2. Add flour and seasonings and cook 1 minute more.
  3. Stir in broth a bit at a time whisking until smooth after each addition.
  4. Add celery, carrots, potatoes, and bay leaf. Bring to a boil, reduce heat to a simmer, and cook covered for 17 minutes or until vegetables are tender.
  5. Stir in the chicken, tortellini, and cream, simmer an additional 5 minutes uncovered or until tortellini is cooked through.
  6. Stir in peas, discard bay leaf and season with salt and pepper to taste. Let rest 2-3 minutes to heat the peas.

Notes

  • This recipe uses fresh or frozen tortellini. Dried tortellini (or other dried pasta) should be pre-cooked most of the way.
  • If you plan to keep or freeze leftovers, cook the tortellini on the side and add it to each bowl as you serve. It can get a bit too soft if it sits in the broth too long.
  • Chicken can be swapped for smoked sausage or cooked Italian sausage if desired.
  • If you aren't a fan of peas, you can use green beans instead. They will need about 12 minutes to cook.
