Creamy Dreamy Cauliflower Soup

Creamy Dreamy Cauliflower Soup is a velvety soup made by simmering cauliflower, potatoes, onions, garlic, milk, and chicken broth together until tender, then blending to a smooth consistency. Its mild and comforting flavor profile is enhanced with fresh thyme, cream, and olive oil as optional garnishes. This soup provides a filling and warming dish ideal for cooler days or when a nourishing, creamy vegetable soup is desired.

Description

Creamy Dreamy Cauliflower Soup combines cauliflower florets, potatoes, onion, and garlic with milk and chicken broth to create a comforting puree. The soup is first simmered until all the vegetables are very soft, then blended using a handheld blender until silky smooth. Adjusting the consistency can be done by adding more liquid or reducing it to taste. The optional garnish of fresh thyme along with a drizzle of cream and olive oil adds subtle herbaceous and richness notes.

The resulting soup has a smooth, creamy texture with a gentle, savory cauliflower and potato flavor lifted by aromatic garlic and onion. It is cooked on the stovetop and can be served warm as a light meal starter or main dish. The soup's balanced gentle taste and creamy texture suit those seeking a comforting vegetable-based pureed soup.

When blending, it is best to use a handheld blender directly in the pot to avoid hot liquid splatter. You may adjust salt and pepper after blending to taste. The soup can be adjusted thinner or thicker with additional milk, broth, or water, but watch for over-reducing to avoid excessive saltiness.

Ingredients

Servings

Soup

  • 3 garlic roughly chopped, cloves
  • 1 kg / 2 lb (1 medium head) cauliflower , florets broken off and stalk roughly chopped
  • 8 oz / 250 g (1 large, 2 small) potato peeled and roughly diced
  • 1 onion peeled and roughly chopped, large
  • 2 cups milk (any - dairy, non dairy, full fat or low fat)
  • 2 cups chicken broth or stock
  • salt to taste
  • black pepper to taste

To garnish (optional)

  • thyme (highly recommended!)
  • cream to drizzle
  • olive oil to drizzle

Instructions

  1. Place all Soup ingredients (except salt and pepper) in a large pot over high heat and bring to boil, then turn down to medium and let it simmer for 10 to 15 minutes, or until the cauliflower is very soft.
  2. Use a hand held blender and blend until smooth (Note 1), then add salt and pepper to taste.
  3. If the soup is too thick for your taste, add more milk, water or stock (and more salt if needed). If you want it even thicker, let it simmer on the stove for a while longer to reduce down and thicken (be careful not to reduce it so much that it is too salty).
  4. Serve, garnished with fresh thyme leaves and drizzled with cream and/or olive oil, if desired.

Notes

  • Using a handheld blender directly in the pot helps avoid splatter from hot soup, unlike using a countertop blender which requires cooling first.
  • Adjust the thickness by adding more liquid or letting the soup simmer longer, but avoid over-reducing to maintain balanced seasoning.
  • Fresh thyme as garnish adds a subtle herbaceous note that complements the creamy cauliflower base.
