Creamy New Potatoes with Bacon and Chives

An ideal side dish to accompany summer barbecue with the flavors of a loaded baked potato.

Ingredients

  • 1 1/2 lbs new potatoes red or white
  • 1 teaspoon salt
  • 3 Tablespoons ranch dressing homemade or otherwise
  • 3 lices cooked bacon crumbled
  • 2 Tablespoons chopped chives or green onions

Instructions

  1. Quarter potatoes and place in a medium pot. Cover with cold water, add salt and place on the stove top. Partially cover with a lid and bring to a boil.
  2. Boil gently until fork tender. Drain and cool slightly.
  3. Add ranch dressing to potatoes and stir to coat. Place in a serving bowl and sprinkle the bacon bits and chopped chives on the top. Serve hot.
