Creamy Salmon and Dill Angel Hair Pasta

A rich creamy sauce with salmon, dill and angel hair pasta with a little cayenne kick! You will love this pasta dish! A super simple weeknight meal too!

Ingredients

  • 1 lb angel hair pasta

Poached Salmon Ingredients

  • 12 oz salmon
  • 1 cup water
  • 1 Tbsp black peppercorns whole
  • ½ lemon sliced
  • 2 Tbsp Dill chopped
  • 1 tsp kosher salt

Sauce Ingredients

  • 1 Tbsp butter
  • 2 shallots minced
  • 1 garlic clove minced
  • ¼ cup wine
  • 1 ¼ cup heavy cream
  • ¼ tsp cayenne
  • ½ tsp salt
  • 2 Tbsp chopped fresh dill
  • 2 Tbsp Curly parsley chopped
  • grated Parmesan cheese sprinkled on top

Instructions

  1. To poach the salmon: Place water, peppercorns, lemon slices, and dill in a skillet and bring to a boil. Place salmon in the water. Cover and cook on medium for about 15 minutes.
  2. In a large pot bring 4-6 quarts of water to a boil with 1 tsp. of salt, and 1 Tbsp. olive oil.
  3. Cook the pasta according to the package instructions. Drain.
  4. While the water boils, melt butter in a skillet. Saute garlic, and shallots until translucent. Add wine and stir until most of the liquid evaporates.
  5. Stir in the cream, and allow it to simmer until it begins to thicken slightly.
  6. Sprinkle in the cayenne, and salt.
  7. Place pasta back in the pot, and pour the sauce over it. Mix well to coat evenly.
  8. Toss in the salmon. Mix in the dill and parsley.
  9. Serve with Parmesan cheese.
