Crockpot Taco Soup
Description
Crockpot Taco Soup features ground beef cooked with onions, garlic, and taco seasoning, combined with tomato ingredients, black beans, corn, and water before being slow-cooked. The long cooking time allows the flavors to deepen and the ingredients to meld, resulting in a warm and comforting soup with a balanced savory and mildly spicy profile. The texture is hearty due to the beans and corn, while the tomato base provides a smooth background. Optional toppings such as shredded cheese, sour cream, and tortilla strips introduce creaminess and crunch.
This soup works well for family dinners or meal prepping, as it holds up for several days reheated. The toppings can be tailored to taste or skipped entirely. For a quicker version, the beef mixture can be cooked separately on the stovetop before transferring to a pot with the other ingredients to simmer. Leftover taco meat can be substituted to simplify the process.
When making adjustments, seasoning can be tailored with salt and pepper to preference. The slow cooker makes preparation hands-off, and the soup serves multiple people comfortably.
Ingredients
- 2 tablespoons olive oil
- 1.5 pounds ground beef
- 1 cup onion diced
- 3 cloves garlic minced
- 3 tablespoons taco seasoning homemade
- 2 cans diced tomatoes with green chilies 10 ounces each, undrained

- 2 cups water
- salt to taste
- black pepper to taste
For topping:
- cheese optional, shredded

Instructions
- Heat oil in a large skillet over medium heat. Add in ground beef and cook until the beef starts to brown. Add in onions and garlic and cook until the beef is completely browned. Drain excess oil.
- Return the pan to medium heat and stir in homemade taco seasoning. Cook for 2 minutes, stirring constantly.
- Transfer ground beef mixture to a slow cooker.
- Stir in diced tomatoes, tomato sauce, black beans, corn and water.
- Cover and cook on low for 6-8 hours, or high for 3 hours. Add salt and pepper to taste.
- Before serving, top with shredded cheese, sour cream, green onion and tortilla strips.
Notes
- Stovetop method: Brown beef with onions and garlic, add other ingredients, and simmer gently for about one hour.
- Using leftover taco meat saves prep time; start soup with the canned diced tomatoes onward in that case.
