Cube Steak Mushroom Casserole
Description
This casserole features cube steak diced and mixed with raw long-grain white rice, canned French onion soup, beef consomme, and sliced mushrooms in a prepared baking dish. The mixture is topped with unsalted butter pats which melt during baking to add richness and aid in browning. The casserole is covered with foil and baked at a high temperature to cook the rice and tenderize the meat evenly.
After an initial covered bake to steam the rice and heat the ingredients, the foil is removed and baking continues allowing the top to brown and mushrooms to concentrate flavors. The final dish has tender rice and meat infused with savory onion and beef flavors. Chopped green onions or chives garnish the casserole to add fresh herbal notes and a mild crunch contrast.
This meal combines simple pantry staples for a convenient oven-ready dish that can be served as a standalone entree or alongside vegetables. It balances hearty textures of meat and mushrooms with the soft fluffiness of cooked rice.
