Cucumber Mojito

You'll be sittin' cool as a cucumber with this refreshing Cucumber Mojito! This fun riff on a classic mojito is the ultimate thirst-quenching cocktail of summer, with the cooling flavors of mint and cucumber, plus bubbly club soda!

Ingredients

  • 8 fresh mint large leaves
  • 4 lices cucumber about ⅛" thick (I use an English cucumber, fresh
  • 1 lice lime about ⅛" thick, fresh
  • 2 ounces lime juice freshly squeezed
  • 2 ounces white rum
  • 1 ounce orange liqueur such as Cointreau
  • 1 ounce simple syrup use more or less, to taste
  • 3 ounces club soda chilled
  • mint cucumber slices, and lime slices - optional garnish, sprigs

Instructions

  1. To a tall glass, add mint leaves, cucumber slices, lime slice, lime juice, rum, and orange liqueur. Muddle everything together, crushing the mint, cucumber, and lime to release their flavor.
  2. Add ice to the glass, then top with club soda. Give the drink a quick stir to combine.
  3. Garnish with lime and/or cucumber slices. Enjoy immediately.

Notes

  • Make it spicy: If you like drinks with a kick, add 1 or more slices of fresh jalapeno to the glass in the first step. Muddle with the other ingredients and proceed with the rest of the instructions.
  • Don't like rum? This drink is very good with gin! Vodka is another good choice.
  • Make a pitcher: Here's what you'll need to make a pitcher of cucumber mojito mix, enough for 6 drinks:
  • Muddle the ingredients in a pitcher and keep in the fridge until ready to use. To serve, pour mixture into 6 tall ice-filled glasses and top with 3 ounces of club soda each.
  • 40 large fresh mint leaves
  • 24 slices fresh cucumber, about ⅛" thick
  • 6 slices fresh lime, about ⅛" thick
  • 12 ounces of freshly squeezed lime juice
  • 12 ounces white rum
  • 6 ounces orange liqueur, such as Cointreau
  • 6 ounces simple syrup (use more or less, to taste)
