Ingredients
- 2 English cucumbers
- kosher salt
- 1 small red onion chopped
- ¼ cup rice wine vinegar
- 4 tablespoons extra virgin olive oil
- 2-½ teaspoons granulated sugar
- ¼ teaspoon ground black pepper
- ¼ cup chopped fresh cilantro or Italian parsley , chopped
Instructions
- In a small bowl, whisk together the rice wine vinegar, black pepper, and sugar. While whisking, slowly adds the oil and whisk until smooth. Season to taste with kosher salt. Set aside.
- Soak the red onions in a small bowl of cold water while you prepare the rest of the ingredients, then drain in a fine-mesh strainer. Blot dry with a paper towel. (This will mellow out and get rid of the sharp, raw onion taste).
- In a medium bowl, add the cucumbers, onions, and cilantro and toss well. Add the dressing and re-toss. Adjust the seasonings, if needed. Serve immediately or refrigerate until ready to use for up to 12 hours.

Notes
- How to Store
- Cucumber Salad can be stored in the refrigerator in an airtight container for 2-3 days. To prevent the cucumbers from becoming too soggy, it's best to drain off any excess liquid before storing it in the container. Then, when you're ready to serve the salad again, give it a good stir and taste it to see if it needs any additional seasoning. You can also add some fresh herbs or chopped vegetables to provide the salad with a new twist.
- Make-Ahead
- Cucumber Salad is a great make-ahead dish, as it can be prepared several hours or even a day in advance. This makes it perfect for entertaining or those busy weeknights when you want a healthy meal ready. To make the salad ahead of time, follow the recipe instructions, but wait to add the fresh herbs until just before serving. Once the salad is prepared, cover it with plastic wrap or transfer it to an airtight container and store it in the fridge until ready to serve.
- When you're ready to serve the salad, please give it a good stir and sprinkle the fresh herbs on top. You can also add in any additional ingredients or seasonings at this time to boost flavor. By making the salad ahead of time, you'll have one less thing to worry about when it comes time to prepare your meal. Plus, the longer the salad sits in the dressing, the more flavorful it will become, so making it ahead of time can enhance the overall taste.
