Simple Watermelon Cucumber Salad tossed with feta cheese and a light balsamic vinaigrette. Topped with fresh basil for a refreshing summer fruit salad.

Ingredients
- 6-8 cups seedless watermelon cubed
- 4 Persian cucumbers chopped
- 2 tablespoons extra-virgin olive oil
- 1 tablespoons balsamic vinegar
- 1 tablespoon honey
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ½ cup fresh basil leaves chiffonade
- ¼ cup crumbled Feta cheese
Instructions
- In a small jar, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper to create a dressing. Set aside until ready to serve the salad.
- Place the watermelon and cucumbers in a large bowl. Drizzle the dressing on top of the salad. Add the feta cheese and basil on top and enjoy immediately.

- For best results, prepare the salad as close to serving as possible. If needed, prepare the individual ingredients ahead of time, but do not mix with the dressing until just prior to serving.
