Ingredients
- 4 medium yellow onions
- 2 tablespoons unsalted butter
- 3 tablespoons olive oil, divided
- 1 teaspoon kosher salt
- ½ pound ground beef
- 1 ½ teaspoons hamburger seasoning
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- ½ teaspoon Worcestershire sauce
- 1 cup (56.5 g) Gruyere cheese, shredded, divided
Instructions
Onions
- Line a sheet pan with parchment paper.
- Cut about ½ inch off the top and bottom of each onion and remove the outer dry papery layer. Use an apple corer to remove the center of the onion.
- With clean hands, remove the inside layers, leaving 2 outer layers of the onion intact. Reserve the removed inside layers of the onion.
- Place the hollowed onions onto the lined sheet pan, leaving about an inch between each.
- Cut the removed inside onion layers into large dice.
- To a large skillet over medium-low heat, add the butter and oil. When hot, add the diced onions and salt. Cook, uncovered, for 50-55 minutes, stirring occasionally, until the onions have softened and turned golden brown. While the onions are caramelizing, prepare the hamburger.
Hamburger Mixture
- To a large skillet over medium heat, add the ground beef, hamburger seasoning, garlic powder, pepper, and Worcestershire sauce. Cook until the beef is no longer pink (8-10 minutes). Remove from heat and drain.
- Mix in ¾ cup of cheese and ½ cup of the caramelized onions.
Assembling and Baking
- Preheat the oven to 375°F.
- Spoon an equal amount of the beef mixture into the center of each of the hollowed-out onions.
- Top with the remaining caramelized onions. The stuffing will be overflowing.
- Bake for 35 minutes, or until cooked through and the outer onions are soft.
- Remove from the oven. Top the onions with the remaining ¼ cup cheese.
- Bake for an additional 10 minutes, or until the cheese is hot and bubbly. Serve.
