Deconstructed Salsa Verde Burrito Skillet

If you're craving all the flavors of a classic burrito without the hassle of rolling it up, this Deconstructed Salsa Verde Burrito Skillet is the perfect solution. Packed with seasoned ground beef, beans, and a zesty salsa verde, this one-pan meal brings together all your favorite burrito ingredients in a deliciously easy, no-fuss way.

Ingredients
- 1 lb. ground beef I used 96/4
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt or to taste
- 1 cup cooked white rice (155g)
- 3/4 cup mild guacamole salsa (180g)
- 3/4 cup mild salsa verde (180g)
- 4 oz. can chopped green chiles
- 1/2 cup frozen corn (68g)
- 15.5- oz. can cannellini beans rinsed & drained
- 1/2 cup shredded Mexican cheese (56g)
- sour cream optional for serving
Instructions
- Grease a large skillet with cooking spray. Add the ground beef and cook over medium heat, crumbling with a meat masher as you go until beef is browned, about 8 minutes.
- Remove from heat and mix in the chili powder, cumin and salt.
- Stir in the cooked rice, guacamole salsa, salsa verde and green chilies. Then stir in the corn and beans.
- Return to medium heat, stirring occasionally until the corn is thawed through, about 3-4 minutes.
- Sprinkle cheese over top, cover with a lid and cook for another 2-3 minutes or until the cheese is melted.
- Remove from heat. Serve hot, divided into bowls with sour cream (adds a yummy cool, creaminess!) and tortilla chips, if desired, and enjoy!

- – normal tortilla chips or Quest chips for some extra protein! You can also make your own chips: Cut up some Joseph’s Lavash (or Cut Da Carb) into triangles, spray with cooking spray and bake in the oven for 5-8 minutes on broil or until desired crispiness.
- – Don’t want it deconstructed? Just throw in a tortilla. This is what Simon does every time I make this!
- – Place your deconstructed burrito over some greens kinda like a Chipotle salad bowl!
