Deliciously Creamy Carrot Soup

This creamy carrot soup blends sautéed shallots, onions, garlic, and Thai red curry paste with cooked carrots and vegetable broth, then purees the mixture to a smooth texture. Heavy cream adds richness and a silky finish. The result is a warmly spiced, velvety soup that balances sweetness from the carrots with a gentle heat from the curry.

Description

Deliciously Creamy Carrot Soup starts with sautéing shallots and onions in butter until soft, seasoned lightly with salt. Garlic and Thai red curry paste are added briefly to release their flavors before adding chopped carrots and vegetable broth. The mixture simmers until the carrots are tender, allowing the flavors to meld.

After cooking, the soup is pureed until smooth, either with a hand blender or in batches using a food processor. Heavy cream is stirred in at the end to provide a luscious, creamy texture and mellow the spices.

This soup is ideal as a comforting starter or light meal, showcasing a balance of sweet root vegetables and the warmth of red curry. It is best served warm and can be held gently on low heat before serving.

Ingredients

Servings
  • 8 medium carrot peeled and chopped
  • 2 medium shallot sliced
  • 1 medium white onion diced
  • 1/2 teaspoon salt or to taste
  • 8 cloves garlic sliced
  • 2 teaspoons Thai red curry paste
  • 4 tablespoons butter
  • 1 cup heavy cream
  • 6 cups vegetable broth

Instructions

  1. In a large saucepan, melt the butter over medium heat. Add in the shallots and onions and saute for about 5 minutes. Season with a little salt. Add in the garlic and Thai red curry paste and saute for just another minute or two to allow the flavors to be released.
  2. Add in the carrots and vegetable stock and bring to a boil. Reduce heat and simmer until the carrots are soft, about 20 minutes.
  3. Use a hand blender to puree the soup, or puree in batches in a food processor or blender. After the soup has been pureed, return to a low heat and add in the heavy cream. Taste and add salt if necessary. Hold soup warm to serve.
