Ingredients
- 8 ounces rotini pasta
- 1 cup dill pickles chopped
- 1 cup cheddar cheese diced
Dressing
- ½ cup mayonnaise
- ½ cup sour cream
- ¼ cup pickle juice
- 2 tablespoons fresh dill chopped
- 1 tablespoon ketchup
- 1 teaspoon yellow mustard
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- salt to taste
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente. Drain and run under cold water to stop the cooking and cool the pasta.
- While the pasta cooks, whisk together the dressing ingredients in a small mixing bowl. Check the seasoning and add salt to taste.
- Add the pasta, pickles, and cheese into a large mixing bowl. Pour on the dressing and mix until everything is coated.
- Chill in the fridge until ready to serve. (see note)

- The pasta will soak in the dressing after a while and the salad will seem “dryer”. To refresh, just add some more pickle juice and stir again.
