Description
Preparation begins by finely dicing onions and carrots, then sautéing them in olive oil until golden to build a flavorful base. Frozen corn is added along with chicken broth, which is brought to a boil to form the soup's liquid foundation. Pelmeni, Russian-style meat-filled dumplings, are then added and cooked about 20 minutes until they rise to the surface, indicating doneness.
Fresh chopped green onions are stirred in partway through cooking to contribute mild onion flavor and color. Just before serving, freshly diced parsley is added to impart a bright, fresh aroma and finish the soup with an herbal note.
The soup is served hot as a hearty starter or light main dish, offering a satisfying combination of broth, vegetables, and tender dumplings in each spoonful.
Ingredients
- 2 tbsp olive oil
- 2 carrot medium
- 1/2 onion large
- 1 cup corn frozen
- 3 qt chicken broth
- 1 lb pelmeni
- 1/2 cup green onion chopped
- 3 tbsp parsley diced, fresh
Instructions
- Dice onion and carrots into very tiny pieces. Preheat the pot with olive oil, place onions and carrots. Saute until golden brown.
- Add corn and chicken broth to the pot. Bring broth to a boil.
- Add dumplings and green onion, and cook for about 20 minutes. All dumplings should float to the top once they are cooked.
- Add parsley to the soup. Serve hot.
